Honey, Pom, + Pecan Yogurt Parfait

Hello! It’s about 3am here and my husband is busy signing out patient cases while I’m just finishing editing some food pictures that I took today! I don’t usually stay up this late but my hubs has been lately b/c he’s been totally swamped at work. Don’t know how he keeps his cool when there’s so much going on all at once. It’s been overwhelming but exciting at the same time. Three amazing opportunities happening simultaneously for him on a professional level and we are beyond thrilled and grateful.

OK. Enough of my ramblings.

Let’s switch gears to food! One of my FAVORITE topics! I’ve had a pomegranate sitting in my fridge for the past few weeks. Luckily, it has a long shelf life. I’ve been wanting to do something with it but didn’t know what until I gave it some thought today and silly me…why not make a parfait out of it?! We always have yogurt in house (for Zoey) and the other few ingredients? They often live in my kitchen already. So here it is, I present to you Honey, Pomegranate, + Pecan Yogurt Parfait. Easy as it is delicious!

On a side note, I just want to “Thank You” for all the comments/likes on the previous post, Humbling Beginnings & Giving Back. It’s very humbling and encouraging that the post was so well-received. It all brings me back to my Christmas childhood. The memories of gifting my 8 siblings with gifts that were all handmade b/c we didn’t have the resources to buy them. One that I would never forget was the telescope made out of two empty toilet paper rolls. Of course, it didn’t function as a telescope but I had fun making it!

It’s so true what momwhearingloss said, “Don’t judge a girl by her clothes..gorgeous or shabby…” LOVE her comment! Lance Romel & Ramaink, your quest to help children have a better education by providing them with adequate resources is so inspirational. You can’t give them a better gift! Buckytheblog, I hope you’ll find your way to help those who live in poverty. I’m sure that you’ll be guided towards the right direction.
