I’ve been a smoothie Queen ever since my sister got me a Vitamix. I use it everyday primarily to whip up super healthy drinks for my Z. Since the weather has been getting warmer (although not warm enough!), I’ve made some yummy and refreshing combinations for myself!
Today was all about Strawberries + Coconut…
Making this is fairly easy. Blend the following:
1 cup of frozen strawberries (you can use fresh, but I like to freeze mine first so I can avoid using ice)
1 cup of pure silk coconut milk drink (consistency is similiar to soy milk)
1 tablespoon of canned coconut milk (this is more concentrated like a paste)
1 tablespoon of maple syrup.
To make things pretty: 1. moisten the rim of the glass with a lemon wedge 2. press rim into coconut powder.
I also enjoyed my smoothie with some coconut & raspberry macarons!
As summer draws nearer, I’ll share more thirst-quenching smoothie combinations. It’s time to spend some quality time with Zoey at the park.

I just tried making a smoothie with coconut milk and it didn’t taste good at all however seeing that you only used a tablespoon I think that’s where I went wrong-I used a whole can and the taste was overpowering! Thanks for the recipe. You’ve tempted me to try again.

Hi – A whole can of coconut milk is A LOT!! Use a coconut milk drink instead (I used the brand silk) http://silk.com/products/original-coconutmilk and then add 1 tablespoon of canned c. milk for just a little more intense flavor.
