I’m not a popsicle queen. However, it may appear so based on my recent popsicle-making obsession. And why not? They are so simple, healthy, and delish. Perfect for warm glorious days like today.
Yesterday, I made some blueberry yogurt popiscles in literally less than 5 minutes. Zoey hasn’t taste-tested them yet but I’m sure they’ll be one of her absolute favorites.
Added a handful of blueberries, a cup of nonfat vanilla greek yogurt, and 1 tablespoon of honey into my Vitamix and did a quick blend.
To create the layering look: add one fresh blueberry into the bottom of the popsicle mold, then a dollop of nonfat vanilla greek yogurt, next pop in 2 whole blueberries, and lastly, pour in the blended blueberry yogurt concoction. Insert popsicle sticks and freeze!
The best part is biting into the whole blueberries…
Can’t get any healthier and yummier than this!

Never heard of blueberry yogurt but Popsicle are delicious . all-in-all it looks so yummy and am sure going to be trying this out, Thanks for posting.

These look great! I love making popsicles for my kids. Our favorite is pureed strawberries with pineapple chunks. They probably wonder why I am constantly pushing popsicles on them, but it’s a great way to get in some fruit and dairy!
