Ever wonder how to make Miso soup? You know the soup that typically gets serve at Japanese restaurants? It’s actually very very simple. All you need are just a few ingredients and probably about 10 mins. of your precious time.
Made some for lunch. I forgot how yummy and such a breeze it is to prepare!
Mushrooms are optional. You probably won’t find them in the Miso soups served at restaurants but I like to add them b/c 1. I love mushrooms 2. I like the added heartiness!
Miso paste will serve as the base of the soup. You can find these in oriental markets.
My mushrooms of choice are baby bella and oyster mushrooms.
Here’s how: 1. Into a small pan, add 2 cups of water (chicken broth can be substituted) & 2 tablespoons of Miso paste 2. Stir over medium heat until the paste has dissolved 3. Add in a handful of sliced mushrooms and small cubes of soft tofu 4. Bring to a quick boil then let simmer for about 5 mins. 5. Garnish w/ chopped scallions
A little note: When handling soft tofu (you want to cut them into small cubes), be very gentle b/c they can easily break apart and become mush.

I love your version of miso soup. I’m a chopped scallions kind of girl but don’t really like it when they put pieces of dark seaweed in the soup. Seaweed is just asking to be stuck your teeth for awkward hilarity.
