I honestly cannot believe it has been an entire week since my last post! This week flew by uber fast. Like most families, our lives are so busy, it’s hard to find time to breathe during the week. Our daily weekday routine consists of waking up at 6:30am, leave the house by 7:45am, come home by 5:30pm, dinner is served at 6:30pm, and 8pm is when we try to put Zoey down. Not to mention from 6:30pm-8pm is when we bathe, read, and/or watch a movie w/ Zoey. It’s really nonstop!
And the cycle repeats itself until the weekend!
One would think it would be much easier to skip cooking dinner during the weeknights, but it’s a ritual that’s important to us. Zoey eats with us every night at the dinner table and she also helps out with the cooking. The hubs and I rotate preparing dinner although I have to admit that he does more of the cooking than me. I’m officially 8 months pregnant and just don’t have the energy that I used to. Cooking dinner after work? It’s really the last thing on my mind. Can I indulge in a feet soak instead?!!
Some nights we THANK frozen dumplings for making our lives easy! We make these yummy pot stickers in about 5-7mins and enjoy them with rice. They look way fancy but they are really the easiest and fastest thing you can whip up when there’s absolutely no time.
Above is the brand that we buy. It’s important to keep them frozen up until cooking time. One bag will cost you about $4 and has about 20-25 dumplings. Talk about bang for your buck!
And here’s the how to. The oil part browns/crisps the outside and the water part steams/cooks the dumplings. We usually only brown one side. The cooking process does not require flipping the dumplings. Easy as pie.
