Nowadays I’m always in a time crunch. With a 2 month old baby who refuses to lay down and wants to be held 24/7, I really have to operate as efficiently as possible. This means I cannot be a slave in the kitchen. I’ve challenged myself to make 15mins. or less meals- sandwiches, quesadillas, kale salads, etc. Fast, simple, and nothing too schmancy.
Here’s one really quick appetizer that I made recently, prosciutto-wrapped melon. I promise, it doesn’t take much time to cut a melon into wedges, wrap prosciutto around them, and sprinkle them with gorgonzola chunks. If this reallyyyyyyyy sleep-deprived mother of two can do it, so can you.
Needless to say, it tastes ah-mazing!
