Shrimp and Edamame Salad

Ever since making a mental note to myself to eat at least one salad a week; I’ve been thinking of ways to make salads more fun, tasty, and of course pretty on the eyes.

Today, I’m sharing an easy salad recipe that I made this week. If you are a shrimp lover (or wannabe), please stay put. You won’t be disappointed.

This salad consists of only three ingredients: lettuce, edamame, and shrimp. Less is definitely more.

Baked Shrimp Salad by Le Zoe Musings

I used large shrimps here. They were shell on so I had to do a bit of peeling. If this isn’t your forte (yea, you fancy!), get the ones that’s already peeled. You’ll also save time. Free feel to substitute cilantro with any herbs of choice. I would do basil, mint, or thyme.

These are frozen edamame that I got from Trader Joe’s. You can probably tell that I have a tiny obsession with this store. I love the feel of their atmosphere, the flowers that they carry, and their products are so unique in an odd sort of way. Granted, you can find edamame anywhere but you know, it’s different when it comes from Trader’s. I’m so eerily obsessed!

I think any dressing would do but I tossed mine with a light caesar salad dressing. Hope you’ll give this one a try.

  3. TJs also just got their uncooked shrimp back in – frozen – but OH so tasty. Got to love TJs for making it easy. Great recipe! Another great “dressing” could be lemon oil and vinegar, with some thyme mixed in. I’m inspired
