Happy Friday everyone. Aren’t you excited for the weekend? We are planning to pick up the kids, take the ferry into the city, and spend the evening on foot roaming around downtown. This is about as much exercise as I get. Walking four hours count right?
Today, I’m sharing a very light and yummy salad for all you salad enthusiasts. At the end of the post is also a giveaway which I’m sure you would highly enjoy.
This salad is composed of endive, bosc pear (I like them crunchy), blueberries, shaved parmesan cheese, and sprinkled with a few mint leaves. Simple is definitely better!
Here’s the fun part. I love making my own salad dressing but really hate the whisking part. Like seriously, who has the time to whisk oil into an acidic liquid until they thoroughly combine? Do you hear my 1 year old, Axel screaming in the background?! I usually add all the ingredients into a jar, close the lid, and shake it up. That’s definitely the lazy (ah- smart) way to do it. However, here’s an even better way! Use the Mastrad vingaigrette mixer. All you have to do is pour in the ingredients, turn the handle to mix, and serve using the pouring spouts.
It’s so clean and pretty that you can leave it on the table for your guests to use as they please. There are also dressing recipes on the container itself to try. It’s a win-win situation.
For this salad, I made an orange blueberry vinaigrette. Basically, it’s a combination of orange juice, honey, muddle blueberries, extra virgin olive oil, and a few minced mint leaves.
