How do you approach Monday mornings? Long ago, I used to work at a job where Monday mornings give me major Monday blues and anxiety. I’m happy to say that those days are long gone. I don’t think any job is worth the stress and pain of compromising your sanity and happiness. Because once you are miserable at the job, it trickles into your personal life and that’s just not fair to the ones you love.
Nowadays, I look forward to Monday mornings. It’s a fresh new start. New goals, new discoveries. The kids are away at school and there’s so much peace and quiet. My mornings typically start at 6am and it’s nonstop until about 8:30pm when we put the kids to bed.
I haven’t made artichoke tea in a very long time so it’s nice and refreshing to have some already chilled and readily available. There’s no golden rule but here’s what I do: Add two artichokes + 1 gallon of water into a big pot. Bring to a boil, reduce heat, and let simmer for about 1.5-2 hrs (or until the artichokes sink). Take out the artichokes and add sugar to the pot of tea if you want it sweetened. I usually do! Once the tea is cool enough, transfer to a pitcher and store in the fridge. Also, don’t throw away the boiled artichokes! I usually eat them with an olive oil and salt/pepper dip. Just like how you would eat bread at an Italian restaurant.
