Coconut Fig Popsicles

Happy Tuesday! Today, I’m sharing an easy and delicious summer/fall-ish popsicle recipe. You know I love making popsicles and my kids really enjoy them. The ingredients are whole, simple and seasonal. Fall is just around the corner so figs are popping up in the markets now.

These Coconut Fig Popsicles are the perfect summer to fall transition treat.

Recipe- 1. Pour coconut water (w/ pulp) into popsicle molds. 2. Add freshly sliced figs. 3. Freeze overnight.

The reason why the popsicles vary in color is because the figs bleed. This makes them so much more organic and unique. I used two varieties- black mission & candy striped figs.
