Small Bites and Tea

Preparing small bite snacks doesn’t have to be boring. For us well-rounded folks, there are many options. Think about combining your two senses- sight and taste. Everything tastes better when it looks delicious, no? Oh- and by ‘well-rounded’ I mean those of us who eat moderately healthy but can also appreciate the naughty little things in life. Like, fried chicken. Or in this case, mascarpone cheese. I reassure you, a few indulgences here and there will not forever ruin your waistline.

I made these cute little nibbles with toast, mascarpone, and fruits. Mascarpone tastes like creme fraiche but is sweeter and I believe has less fat content. Although very tempting, I wouldn’t recommend eating mascarpone by the spoonfuls.

Here’s how: Make circular toasts using a round cookie cutter. Next, spread mascarpone cheese on top of the circular toasts. Last, layer with your favorite fruits of choice. Voila! Delightful small bites assembled in just minutes.

Btw, don’t have mini panic attacks here. Nothing goes to waste. The toast remnants can be made into croutons for salads or soups.
