Garlic and Herb Tomatoes by Ina Garten

I love watching cooking shows. Currently, I’m obsessed with Chef’s Table on Netflix. It’s one of the most inspiring documentary series I’ve ever seen. The show highlights renowned chefs from around the globe and the way that it’s shot and produced is something so extraordinary and magical. It’s very cinematic and the storytelling of each chef’s struggles and then success transforms you.

I also like Barefoot Contessa a lot. Just today, I watched an episode where she was in Paris visiting restaurants that were owned by Americans. I especially love seeing the simple trips that she often makes to local markets shopping for the freshest ingredients and sometimes sneaking in a wine and cheese purchase. Those are my life goals— eating in Paris & Sunday shopping at local markets for fresh farm products.

A few weeks ago, a made a breakfast spread entirely inspired by the recipes of Ina Garten. One of the dishes was Garlic and Herb Tomatoes which was delicious, healthy and so easy to make.

Full recipe from Barefoot Contessa:

Ingredients:

  • 3 tablespoons good olive oil
  • 2 teaspoons minced garlic (2 cloves)
  • 2 pints cherry tomatoes or grape tomatoes
  • 2 tablespoons chopped fresh basil, plus more for garnish
  • 2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
  • 2 teaspoons chopped fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

I altered the ingredients just a tad. Instead of fresh thyme and parsley, I substituted with mint and cilantro (because that’s what I had). Like the recipe, I also added basil.
