Roasted Cherry Tomatoes and Prosciutto Salad by Le Zoe Musings

This salad is soo yum!! First, I roasted a handful of cherry tomatoes and a garlic clove. Cut the cherry tomatoes in halves, add a pinch of salt and pepper, drizzle some extra virgin olive oil on top, and bake at 300 degrees for about 15-20 mins. To assemble the salad, mix the roasted cherry tomatoes with some fresh ones, add slices of prosciutto and pecorino cheese. Again, season with salt, pepper, and some olive oil. That’s it!!
